WINEMAKING NOTES
The Yakima Valley has become my flagship wine, truly defining my focus on crafting exceptional Cabernets from this unique terrior. This blend showcases the best of four of my favorite Yakima Valley vineyards. By carefully combining these distinct sites, I've created a wine that is beautifully balaned, intensely aromatic, full-bodied. and a quintessential expression of Cabernet Sauvignon, grown here in the Yakima Valley. Hand harvested in September & October of 2022. The grapes were destemmed and crushed leaving 20% whole berries. No pump was used in the transfer of the must. Cold soaked for approximately 3 days at 14oC. Native Yeast began fermenting after about 2 days.
